Variations W/ vegan low-carb zucchini tortilla:

Breakfast Taco: Add scrambled paneer/tofu or egg and cheddar cheese, microwave for 30 seconds until the cheese is melty. Serve withyour favorite keto sauce.

Lunch Quesadilla: Add grilled mushrooms and mozzarellacheese, andfold the tortilla like a quesadilla. Cook each side on a skillet until the cheese melts and the tortilla browns a little. Serve it with sour cream.

Dinner-time Loaded Taco: Pre-cook cauliflower, zucchini cubes and mushrooms with balsamic herb marinade. (You can either grill it or sauté) Add pre-cooked Mexican cauliflower rice, cooked/grilled veggies to each taco and load it with shredded lettuce, cheese and sour cream. Serve it with chipotle or tomatillo sauce.
